The Beet. The veggie that stains your hands and puts the blush in Borscht.
I’ll be the first to admit I was never a true fan of beets until I moved to the Northern end of Williamsburg, Brooklyn in the mid-90′s. Mainly a Polish neighborhood at the time, pickled beets were a favorite side dish at my local corner diner. Plated alongside perogies, applesauce and sour cream- yum, the lineup quickly became my favorite Sunday dinner.
I loved them for their tart sweetness and of course their vivid color. Bordering somewhere between red, purple and pink; theirs is a palette both exotic and quite frankly erotic- in a peasant-ly type of vibe that is.
Even today when I spot them in the produce aisle I conjure up images of medieval damsels tending to their kitchen gardens, patiently waiting for their knight-in-shining armor to return from battle. A real bodice-ripper of a scenario, if you know what I mean. Just the thought of it is making me flush a really great shade of Beet Red.
